WOODSTOCK, VT — For those interested in starting their own vineyards or finding new uses for grapes, the next Billings Backyard Workshop: Introduction to Vineyards & Verjus, could be the event to spark some fresh ideas. The event takes place on Saturday, Nov. 4, from 10 a.m. to 11:30 a.m., at Billings Farm & Museum in Woodstock, Vt.
In this introductory workshop, viticulturist Sharen Conner, along with food writer Martha Esersky Lorden, will discuss how to select, plant and care for grapevines and delve into the world of verjus. This unfermented liquid is made by pressing unripe wine grapes harvested early in the season. This workshop will cover the history and uses of verjus, discuss how to make it and will include demonstrations and tastings of a few recipes made with the product.
Billings Backyard is a series of workshops designed to teach sustainable living skills and is underwritten by a grant from the SpringRiver Private Foundation Trust. Each workshop includes hands-on demonstrations and concrete steps for incorporating these skills into everyday life.
